Watermelon Cucumber Salad

Well, there is no doubt about it, summer has officially come to stay! Summer always screams crunchy, smooth, cold eats to me and this Watermelon Cucumber salad meets all the criteria! Plus, you can use the shell of the watermelon as a serving dish. Which comes in really handy when your serving dish stash is low and you've got a party to host (some things just come with experience!).

Sweet meets tangy with this deliciously, refreshing recipe that combines bold flavors of watermelon with subtle hints of lime, pops of basil and mellow bites of feta crumbles to bring the flavors to full fruition. 

This past weekend we hosted our house warming party and I was determined to make the healthiest, yet tastiest appetizers imaginable. If you follow along on my social media accounts, then you've certainly picked up on my efforts to get back to clean eating after our 2 months of vacationing every weekend! Parties and social get togethers are my weakness when it comes to mindless munching on an array of goodies! We also have like-minded friends, whom I figured would appreciate the lack of temptation. Anyways, what I was trying to say was, the recipe was motivated by the need for healthy, refreshing appetizers for the housewarming party! 

And.... of course there was also homemade guacamole, but you already knew that!


I know there are plenty of watermelon salad recipes jumping out of everywhere lately, but I avoided looking at them because I wanted to see what my tastebuds would create once I started putting it all together. I kept all ingredients fresh, clean and tasty and was delighted by how the recipe turned out! 

Prep Time: 10 minutes


  1. Cut watermelon in half and scoop out watermelon into balls using small ice cream scooper.
  2. Chop cucumber, basil, and red onion and add to watermelon balls.
  3. Squeeze lime over watermelon salad.
  4. Add feta crumbles and mix all together.
  5. Pinch salt over salad to your liking.



  • 1 Medium Watermelon
  • 1 Cucumber
  • 1 Container of Plain Feta Crumbles
  • 1.5 Limes
  • 1/4 Cup Loose Basil Leaves
  • 1/4 Small Red Onion
  • Pinches of Himalayan Salt to your liking
