Banana Walnut Blender Muffins

It was love at first bite. Hints of banana, crunches of walnut, subtle sweetness and the perfect amount of fluff to make this delicious muffin blog worthy! 

I don't know about you guys, but my husband will eat my healthy cooking all day. Well, on second thought, he actually twirls his fork through his greens, bypassing them and stabbing anything that isn't a vegetable, much like a 5 year old. But unlike a 5 year old, when I tell him to "eat his greens" he begrudgingly does so. My point was, there usually isn't a problem when dinner is served. BUT he won't touch my "healthy" sweet treats, because "there's no sugar in them". 

As he was leaving today, I asked him if he wanted a Banana Walnut Muffin, to which he quickly replied, "is it one of your weird, no sugar, muffins? If so, then no. Actually, no I don't want one" (obviously I can't pull any fast one's on this guy). I proceeded to hand him a muffin and he quickly claimed he would eat it at work (aka throw it in the trash without even tasting it) but I knew that so I demanded an itty, bitty bite out of him (I really thought these muffins were good and I wanted the opinion of a finicky eater!). Well, friends, he took one bite, and then another, and another... and ATE THE WHOLE THING. THEN he said, "that was actually pretty good!"

So, if you don't trust my taste buds, I understand. But you can definitely trust his! 

Please, let me know if you do or don't like this recipe! I really try to create tasty "treats" that don't compromise health! While it can be tricky, I know it can be done! 

Prep Time: 5 Minutes

Cook Time: 15 Minutes

Servings: 9


Directions:

  1. Preheat oven to 400 degrees F
  2. Put all ingredients in blender EXCEPT walnuts
  3. Chop Walnuts separately
  4. Once blended, mix walnuts in 
  5. Spray muffin tin and add mixture into muffin tin
  6. Bake for 15 minutes
  7. Eat hot or cold and store in fridge between eats!

INGREDIENTS:

  • 1 Cup Oats
  • 1/4 Cup Coconut Flour
  • 1/4 Cup Coconut Oil
  • 1/4 Cup Raw Honey
  • 2 Ripe Bananas
  • 3 Eggs
  • 1 TBSP Water
  • 1/4- 1/2 Cup Chopped Walnuts

I highly suggest the Ninja Blender. I have the whole kit and use all pieces frequently, but there are many options to chose from. I use it for sweet treats, smoothies, baby food, salsa and just about anything else that you can think of that needs mixed, pureed, chopped, etc. I've had it for years, it's held up extremely well and is probably our most used kitchen tool right along with the coffee maker... and we drink A LOT of coffee!
