You could do absolutely nothing to Salmon and I'd gobble it right up. It's my all-time favorite food. I eat it frequently and I would eat it more if the FDA wasn't concerned with breastfeeding moms and mercury levels!
Changing the marinade keeps it versatile and interesting for me and while 99% of the time I throw some lemon pepper on it and call it a day, some times I like to get fancy. Especially when I'm treating someone else to the dish!
I had some Homemade Pesto in the fridge left over from pizza night. I make a kick-booty pesto for my Margerita Specialty Pizza on Tuesday night! You can find the recipe for the pesto on that page! Anyways, as I was rummaging through the fridge trying to decide how to marinate last night's salmon, I found the pesto. And it all just came together! Lemon Pesto Salmon was born.
It's super easy! The pesto takes the most prep work, but my suggestion would be to have several pesto dishes on your menu for the week and that completely makes it worth your while! Pizza, Pasta, Chicken, Salmon... pesto compliments them all beautifully!
Prep Time: 10 Minutes
Cook Time: 20 Minutes
- Preheat oven to 425 degrees F.
- Squeeze lemon over salmon.
- Slather 2 tbsp of pesto over salmon.
- Bake in oven for 20 minutes.
- Enjoy with your favorite veggies and potatoes!
